Arepa Con Huevo

Ingredients

  • 50 Sunny Fresh® Fried Egg Patties
  • 12 cups precooked corn flour for arepas 
  • 3 tbsp. salt 
  • 15 cups warm water 
  • Oil for frying

 

Preparation

  • In large bowl, mix corn flour and salt.  Add warm water.
  • Stir and knead well with your hands until you get a soft, smooth dough. If dough seems a bit dry, add a little more water.
  • Divide dough into 100 balls. Place each ball between waxed or parchment paper and flatten into ¼” thick disks). Place one egg patty on top of a disk, cover with another disk and seal edges by applying pressure.
  • Heat oil to 350ºF degrees. Place uncooked arepa with egg into the hot oil and cook until golden. Drain on paper towels and serve.
