Arepa Con Huevo

Ingredients
- 50 Sunny Fresh® Fried Egg Patties
- 12 cups precooked corn flour for arepas
- 3 tbsp. salt
- 15 cups warm water
- Oil for frying
Preparation
- In large bowl, mix corn flour and salt. Add warm water.
- Stir and knead well with your hands until you get a soft, smooth dough. If dough seems a bit dry, add a little more water.
- Divide dough into 100 balls. Place each ball between waxed or parchment paper and flatten into ¼” thick disks). Place one egg patty on top of a disk, cover with another disk and seal edges by applying pressure.
- Heat oil to 350ºF degrees. Place uncooked arepa with egg into the hot oil and cook until golden. Drain on paper towels and serve.
